Strawberry Avocado Salad

I always look forward to the early Spring when the first of the berries start coming in. They won’t be local for months here in Ohio, but I still am tempted by the offerings at the market. And one of my favorite ways to  have them often, without overindulging in sweets, is to pop a few on top of a salad here or there.

I find  the flavors go wonderfully with avocado, chevre, and macadamias, so simple as it is, it makes a very satisfying salad plate.

The strawberry vinegar I make myself at home, but you can opt to use store bought of any berry vinegar variety.

Strawberry Avocado Salad
Ingredients:

  • 2 cups mache, arugula or baby greens
  • 2 cups baby spinach
  • 1 avocado pitted and chopped
  • 12 large strawberries
  • 4 ounces soft goat cheese (chevre)
  • 1/4 cup chopped toasted macadamia nuts
  • 1/4 cup strawberry vinegar or other berry vinegar
  • 1/4 cup olive oil
  • 1 teaspoon poppy seeds
  • 1-1/2 teaspoons sugar or honey
  • 1/4 teaspoon (each) salt and black pepper

Method:

  1. Line chilled salad plates with a mixture of baby spinach and lettuces; top with chunks of avocado and sliced strawberries, then sprinkle with bits of chevre and macadamias.
  2. Whisk together vinegar, oil, poppy seeds, sweetener, salt and pepper and drizzle over salads.
  3. Serve at once.

  1. This salad was simply delicious. We loved each and every component of the salad; especially, the strawberries, goat cheese and the macadamia nuts. I made a nice dressing to go on the salad and it was scrumptious. I did use less of the olive oil than the recipe called for as I wanted the vinegar to shine through along with the honey.
