Chilled Thai bean salad is my recipe of the day. We’re combining the classic flavors of an American bean salad with the four core flavors of Thai cooking: hot, sour, salty and sweet.

I love Thai food so this is a natural crossover recipe for me. The sweet-sour complexity with the spicy heat  is something I love.

And for warm weather days when I don’t necessarily want a stir-fry, noodles or curry, this suits.

Ingredients
  

  • 12 ounces string beans blanched, wax beans or haricots verts
  • 2 tomatoes thinly sliced (roma)
  • 1 bell pepper red or yellow bell pepper, julienned
  • 4 scallions shredded
  • 2 fresh red Thai chilies thinly sliced
  • 2 tablespoons chopped cilantro
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons chopped fresh mint
  • 3 tablespoons soy sauce
  • 1 tablespoon vinegar rice vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon fish sauce
  • 1 lime zest and juice from
  • 1/4 teaspoon garlic paste

Instructions
 

  • Toss together blanched beans, tomatoes, bell pepper, scallions, chilies and herbs.
  • Whisk together dressing and pour over salad, tossing to mix.
  • Chill several hours before serving.
