Aloha Chicken Wings

Baked chicken wing appetizers with a fruity pineapple-orange based sauce. Very good! Great for parties and sports get-togethers.

Aloha Chicken Wings

Aloha Chicken Wings
Prep: 6 hours

Cook: 45 mins

Ingredients:

  • 3 pounds chicken wing drummettes
  • 1 cup pineapple preserves
  • 1/2 cup dry sherry
  • 1/2 cup passionfruit pulp or thawed orange juice concentrate
  • 1/4 cup soy sauce
  • 1/2 cup brown sugar, packed
  • 2 teaspoons minced garlic
  • 2 teaspoons grated ginger root

METHOD:

  1. Cut wings into sections and discard tips or save for another use.
  2. Place wings in a large resealable plastic ziplock bag.
  3. Stir together remaining ingredients as a marinade.
  4. Marinate wings in mixture 4-6 hours or overnight.
  5. Preheat oven to 400ºF.
  6. Drain marinade from wings and reserve.
  7. Place wings on a foil-covered baking pan and bake for 35-45 minutes or until juices run clear (time depends on size).
  8. While wings are baking, reduce marinade in a saucepan until it becomes a thick glaze (consistency of ketchup, etc.).
  9. Toss baked wings with glaze as you might toss hot wings in sauce.
