Fleischsalat is my recipe of the day. This is a German version of ham salad which uses bologna as the meat.

The method is quite simple; it’s the type of bologna used that really makes the difference. Use a German style ring bologna or ringwurst, as it is called.

This  is one of my husband’s favorites  and I have prepared it a number of ways. Besides being great on crackers with a cold beer, it also does a fine job as a sandwich spread.

Burgers with Bacon  Sauerkraut Jam

Finally, for  a nice hot sandwich, these Burgers with Bacon-Sauerkraut Jam add a delicious twist to bacon jam and are great any time, but especially suited for Oktoberfest.

Ingredients
  

  • 14 to 16 ounces German ring bologna (diced)
  • 1 1/4 cups diced sour gherkins or Polish dill pickles
  • 5 tablespoons mayonnaise
  • 1 teaspoon German-style mustard
  • Black pepper to taste

Instructions
 

  • Try to cut the bologna and the pickles the same size.
  • Mix together and chill before serving; serve with rye bread.
