Korean Kimchi Marinated Tofu

I first came across this in the deli counter at the local Earth Fare market, when I needed a snack to hold me until I got home with groceries and could fix dinner. They carry a lot of natural and organic foods. It was really good, and I put some together after inspecting the ingredients label. Makes a nice low carb healthy snack!

INGREDIENTS:

  • 12 ounces baked tofu , cubed
  • 1/2 cup water
  • 1/3 cup kim chi pickle,minced
  • 2 tablespoons kim chi brine
  • 2 tablespoons brown sugar (or vegan brown sugar substitute or Splenda brown sugar blend)
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil 
  • 1 tablespoon gochujang paste (fermented spicy soybean paste)
  • 1 teaspoon toasted sesame seeds
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon soy sauce
  • 1/2 teaspoon white miso paste 
  • 1/2 teaspoon tahini

Method:

Step 1

Stir together ingredients and marinate for several hours.

Step 2

Serve cold.

Easy, huh?
