My recipe of the day is apple butter banana bread, a recipe I have been using for years. The apple butter imparts a lot of great flavor as well as helping it to be just a bit more moist. The bananas on top of that really seal the deal.
I like making my own apple butter to use in this but any will do. I do use a no-sugar-added apple butter in this recipe. If you use an apple butter made with sugar, add about half the sugar for the recipe and taste it after you add the apple butter and then adjust it to the full amount to make sure it is not too sweet for you using that.
The bananas have been piling up around here. I don’t always get to the bananas on time as it is. So when they get ultra-ripe, I peel them and put them in a zippy and toss in the freezer. I’ll bake with them later.
Although I have tried the tip about putting frozen bananas in the food processor to make a banana ice cream. It works. All it needs are the bananas and nothing else. Although I imagine you could add other stuff.
But anyway, my daughter had to move in with us over a divorce during covid and she likes the green bananas (very green). Apparently they are very low in sugar and very healthy. Which means once they turn normal yellow they are past eating date for her. Ha!
Lots of bananas for me to figure out, but hey. At least she is finally interested in something healthy. Maybe she will rub off on me as my eating became more junk-filled to deal with our politically charge and covid filled world. Plus we are still out of work.
Deep breath. We can do this. One step at a time. Soon the sun will shine. I have to believe that. I am a cynical optimist. Ha! We’ll get there. In the meantime, let’s bake, shall we?

Apple Butter Banana Bread
Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground ginger
- 1/2 cup unsalted butter melted
- 2 large eggs lightly beaten
- 1 cup mashed ripe bananas
- 1/2 cup no-sugar-added apple butter
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F./175°C.
- Grease a 9"x5" loaf pan.
- Mix together dry ingredients.
- Whisk together the butter, eggs, bananas, and apple butter until smooth.
- Gradually stir dry ingredients into the batter.
- Pour batter into the loaf pan and bake in the preheated oven for about 60-65 minutes, or until a toothpick can be inserted and removed without batter on it.
- Cool in pan 5-10 minutes, then turn out and finish cooling on a wire rack.

Delicious! I was really looking forward to making this bread and I’m so glad I did. The addition of the apple butter really makes this bread moist and it imparts a nice flavor along with the bananas. This is a great idea to use the apple butter in place of oil and a great way to use up ripe bananas. Will definitely make this yummy bread again soon.
