Buffalo Chicken Salad

Delicious chicken salad with the bite of Louisiana pepper sauce and the creaminess of blue cheese. This makes the perfect sandwich for lunch!

Buffalo Chicken Salad

Chicken salad, with the kick and flavor of hot wings. The kind of blue cheese dressing will probably make the difference. I either make my own with blue cheese or buy the refrigerated type in a pinch. The stuff they sell in bottles in the salad dressing aisle is probably going to be disappointing, so choose wisely. You’re the one that has to eat it. Buffalo salads have the tendency to get milder the longer they sit, so if when you serve it you want more kick, stir in a little more hot sauce before dishing it up.

Prep time: 20 minutes (plus time to chill it down)

Serves: 8

Ingredients:

  • 4 cups chicken (chopped cooked chicken rotisserie, poached or roasted)
  • 1/2 cup mayonnaise
  • 1/2 cup blue cheese salad dressing (freshly made or refrigerated type)
  • 1/4 cup hot sauce (Louisiana hot sauce like Franks or Crystal)
  • 1 cup celery (chopped)
  • 1 cup scallions (sliced
  • Salt and black pepper

Method:

Step 1

Mix together ingredients and chill before serving.

Step 2

Use as a spread on sandwiches, serve with crackers, or serve on a bed of lettuce.
