Easy Lemon Parmesan Baked Salmon

You can put this together in five minutes and cook it in ten minutes or so. And while it’s baking you can saute a quick pan of garden fresh vegetables or throw together a tossed salad for the perfectly healthy weeknight meal. I like this on a bed of romaine with a simple Caesar dressing myself. So good!

Easy Lemon Parmesan Baked Salmon

  • 8 ounces salmon fillets
  • 2 tablespoons Mediterranean olive oil (I like a garlic infused type)
  • 1/2 whole lemon
  • 1/2 teaspoon fresh thyme leave
  • 1/4 teaspoon garlic powder
  • 1/4 cup freshly grated parmesan cheese
  • Sea salt
  • Black pepper


Cooks tip: don’t worry about removing the skin before cooking. It helps to keep the fish moist and flavorful, and comes away easily when the fish is cooked.

  1. Preheat oven to 425 F./broil.
  2. In a small rectangular baking dish, pour oil and the juice from the lemon.
  3. Coat both sides of the fish in the oil/juice; season fish with salt, pepper, thyme leaves, and garlic powder; place Parmesan on a plate and press fish side down into the Parmesan (not the skin side) and place fish fish side up (skin side down) in the baking dish. Sprinkle any escaped cheese onto top of the fish.
  4. Broil about 4-6 inches from element (top rack) for 10-12 minutes, or until fish flakes easily.

  1. I just made this Lemon Parmesan Baked Salmon for dinner and I have to say it is delicious! This is so incredibly easy and quick to make, love it! I served it on top of a baby spinach, arugula and white bean salad. So good! My husband hates fish so I try to take every chance to make and eat fish when he is on a business trip. Thanks for this great recipe!

  2. Never made it with parmesan cheese. Will have to try it next time. The rest of this recipe is pretty much the same I have been doing except I used fresh garlic.

  4. I’m confused about the cooking temp. 425 degrees is not broiling temp (500) therefore the broiler element does not come on. HelpP

    • Hi Jill! My broiler does have that setting, but I suggest that if yours will only broil at 500F that you could opt to either lower the level of the rack or else set it to bake at 425F and finish under the broiler for a minute if you like the top more browned. ~Sue

    This salmon looks delicious. I usually pick up a whole one when DLM is having a sidewalk sale and store the filets in the freezer, but I’m out. I rarely use cheese with fish–no idea why, but this looks too good not to try.
