Ham Salad is my recipe of the day. And whenever you find yourself knee-deep in leftover holiday ham (or just have some extra on hand), keep calm and make ham salad! You won’t need a crystal ball to know that soon, most people will be knee deep in leftover ham from their holiday meals, all year long.

Ham Salad

Ham is an obvious choice for feeding large groups, but often there is still leftover. This recipe is a great way to use up a bit of that for lunch and it is quite simple to make. It makes the perfect sandwich!

Of course, if you like to make something like Ham and Bean Soup or Creamy Ham and Beans with your leftover ham, I have recipes for those as well. Perhaps your ham is really huge and you’ll want to try several recipes. And why not? They are really delicious and can be looked forward to as much as the ham in the main event itself.

So look to your market for special prices on hams during the holiday season and don’t fret too much if the ham is a bit more than you need. Take advantage of the economical prices and eat well with several different ham recipes.

Ingredients
  

  • 1 pound ham finely chopped or coarsely ground
  • 4-6 tbsp. mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 rib celery finely diced
  • 2 tbsp. finely chopped onion or shallot
  • 2 tbsp. pickle relish
  • salt and black pepper to taste

Instructions
 

  • Pulse leftover ham chunks in a food processor until coarsely ground but not pasty; alternatively, finely mince with a chef's knife.
  • Stir together ingredients, seasoning to taste with salt and black pepper.
  • Serve on bread or hard rolls with additional condiments, if desired.

  1. I like ham salad. We rarely eat ham and usually only buy a ham steak, but I do like ham salad better than just the ham. I put in a bit of yellow mustard along with the other stuff.

  2. This looks super yummy. I’ve done chicken salad and tuna salad…but I never would have thought to do ham salad!! Great recipe! Especially with the Dijon mustard. I’m sure that gives it a little kick! Visiting from Lovely Thursday!!

    • It’s a little bit of hot sweet pickle relish that I had that is accounted for in the full amount of pickle relish. If you have a favorite brand, you could mix it half and half with the green pickle relish, but it is not essential to the recipe. I didn’t list it since it is harder to find and doesn’t change the recipe at all. Or, if you like a little spicy like I do, adding a minced jalapeno to the mix of sweet relish should be the same. ~Sue

  4. This is a great way to use up leftover ham. We had these for lunch today. I enjoyed the crunch from the celery and the flavor of the relish. It completely repurposed the ham. Yum! Thank you.

  5. Just the plain ground ham from your food processor goes great mixed in with eggs and cooked as scrambled. I enjoy for breakfast and I’ve eating ham salad sandwiche@s (without the mustard) since my mother hooked me on them back in the 1950s for school lunches
