This has been a family favorite for years. I think it might be the tomato that sets it apart. I have had people tell me it was the best macaroni salad they ever tasted, and they might not be just pulling my leg. One person who raved so much about it was a fellow blogger and friend who has since passed away, and now I think of her every time I have this. Sometimes recipes are like that: what recipes we break bread with friends today will become memories of those friends tomorrow.  People who know me might be aware that my dear brother passed away recently (you may have noticed a period of inactivity on the blog while I was inconsolable), so recipes that remind me of people have come to the forefront, and all together, become healing foods. So sometimes I cook as a pastime, and sometimes I cook to honor those I love. But always, I enjoy  having the people I care about most to sit at my table and break bread with me and give thanks for all we have. As well, I am thrilled that people around the globe who may not ever have the chance to dine with me can use my recipes to dine with those they may.

Years back I used to make this with fat free mayo and whole wheat pasta, and you can use that type of mayo or regular or even Miracle Whip as well. In more recent years I tend to go for a more low-glycemic pasta such as Dreamfield’s brand. But there are so many different types of pasta you could use, the sky is the limit. I also used to make this with sweet relish and fresh red bell pepper (minced) but have come to prefer this with minced dill pickle and roasted pimiento peppers instead. Both ways are good, however. I also used to make this with just egg whites and if you choose to do that, include the whites from 4 eggs instead of two whole eggs. It may (or may not) be more healthy depending on if you subscribe to beliefs about cholesterol in food being absorbed by the body. I tend to think they don’t and that people get higher cholesterol for other reasons, but everyone has their own pet theory.

Fresh and Tasty Macaroni Salad
Ingredients:

  • 3 cups cooked drained macaroni pasta
  • 2 free-range eggs, hard-cooked, peeled and chopped (4 if using just egg whites)
  • 1 rib celery, finely diced
  • 1/2 cup diced ripe heirloom tomatoes
  • 1/2 cup finely sliced scallions
  • 1 2-ounce jar diced roasted pimiento peppers, drained
  • 1/4 cup chopped dill pickle
  • 1/2 cup mayonnaise or Miracle Whip
  • 2 tablespoons minced fresh cilantro or fresh parsley
  • salt and pepper to taste

Method:

  1. Combine ingredients.
  2. Chill before serving.

  2. I’m sorry about your brother. My brother won’t be with us much longer. Food is such a beautiful connection to our past in ways we never imagined at the time. My family is gathering soon to say good-bye while he’s still a part of our lives. It’s pot luck. I will bring your wonderful salad along. Thank you so much for sharing.
