There are a number of ways to make cucumber salad, with perhaps the most common being with tomato and onion or just onion. However, the tangy flavor of feta cheese, as we know, sets off the flavors in cucumber. It is a family favorite with us, as we discovered early on when having pita sandwiches with souvlaki and feta plus tzatziki sauce or on gyros with extra feta added.

On of the first places Bill and I had souvlaki on pita was back in the 80’s at a place called Olympia Kebab House and Tavern, which as I recall was just south of I-40 at Clayton Road in St. Louis. We discovered it as we used to like to drive out past Washington University to go to a little record store to browse used albums, and one evening we were hungry and had stumbled across it.

I do remember the waiter who worked there most often- his name was Nick. He was kind of a funny guy and had talked us into trying their pork souvlaki on pita, which had the tzatziki as well as crumbles of feta.

And while this salad does not have pork in it (and really shouldn’t after all, since cold pork is well,  yuck!) it can be a great item to go along with your souvlaki dinners. I recently made some souvlaki by Gerry on Recipezazz, and it was great. I didn’t have this with it (I had made this a couple months ago), but it would have gone swimmingly together. (I made Greek salad to go with the souvlaki dinner since I had salad ings. to use up.)

But I think next time I will. I might be getting hungry for chicken souvlaki or home made gyros and this salad would be quite nice indeed. If you try, I do hope you enjoy, as always-

Ingredients
  

  • 2 cucumbers (peeled, seeded and chopped)
  • 4 ounces feta cheese (crumbled)
  • 1/2 cup chopped scallions
  • 1/4 cup sliced black olives
  • 1/4 cup diced pimiento peppers
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon fresh dill weed
  • 1 tub plain Greek yogurt (mine was 5.3 ounces)
  • salt and pepper to taste

Instructions
 

  • Combine ingredients and serve.
