Poutine in the not too distant past was a shady little secret for Canadians, with those in Quebec sneaking it in late night snack raids to the kitchen. Apparently worried that this yummy snack might not be haute enough for the world, they tried to hide it.

No fair!

Eventually, whenever you try to keep a secret, word gets out.

And word has indeed got out about poutine, and not in a bad way! French fries covered with beefy gravy and soft fresh cheese curds are enough to make any southern girl swoon. But in Texas, where the girls are bigger (everything is bigger in Texas!) and badder and more rough- beefy gravy is not “quite enough.”

Enter the Texas style gravy, with flavors deepened with roasted chilies and the fire of jalapeno. This time, it’s no secret, the recipe is right here. Like a sinful cross between poutine, nachos and chili cheese fries, none of them being quite like it, this is going to quickly become your new favorite.

And we here at the Lau household (with half of us born and raised in Wisconsin) are going to be spending this particular Thursday evening watching the Green Bay Packers face-off the Seattle Seahawks. And what better way to watch the Pack crush Seattle than by munching on football appies jammed with cheese? (We are cheeseheads. We are proud. We will prevail at the end of the day!) 😉

Of course, the *other half* of the Lau household has it’s roots going back to Texas, land of big chiles, big ideas, well, big everything. So while my husband adores his cheese, I do adore the peppers. Well, he does too. And rightly so, because he may be silly sometimes, but his brain is in the right place when it comes to spicy food.

But truth be told, this poutine is not all that spicy, unless you want to jack it up with slices of jalapenos, and I definitely did. Yum.

The ingredients are really simple, because. When it comes time for the game tonight, no one wants to fool with making everything from scratch. Of course, when you have time, feel free to do so, but these are rightly excellent with frozen fries, canned beef gravy, jarred peppers, and packaged enchilada (Mexican cooking) sauce.

When friends drop by you can throw it together in a few minutes, and spend quality time with those you love. Because that’s what it’s all about in the end, right?

Just don’t forget to watch the game. You’ll not want to miss Mr. Aaron Rodgers cleaning up the neighborhood. 😉

Texas Poutine

  • Servings: 4-6
  • Difficulty: easy

Texas Poutine
Ingredients:

  • 32 ounces frozen crinkle cut french fried potatoes, baked or fried according to package directions
  • 12 fluid ounces beef gravy
  • 8 fluid ounces Old El Paso Roasted Tomato Mexican cooking sauce
  • 1-1/2 pounds fresh cheddar cheese curds
  • Mexican crema or sour cream (optional)
  • pickled jalapeno slices (optional)

Method:

  1. Heat/cook fries as desired.
  2. While fries are cooking or baking, mix together the beef gravy and cooking sauce in a saucepan and warm until hot.
  3. Cover fries with the Texas gravy (sauce) along with a sprinkling of cheese curds, and drizzle with Mexican crema and garnish with pickled jalapeno slices (if desired.)
