Cornbread stuffing mix as a breading is very versatile and can add crunch as well as color to oven baked items with very little fat. It browns much better than panko, which is really designed for deep frying. And it has far better crunchiness than toasted bread crumbs. So in the end, the crushed stuffing mix might well be the obvious choice for items like baked chicken strips.
Children love them and they are really good for weeknight eating. Adults can easily top a salad with them for a healthy main dish salad meal.
Cornmeal Crusted Oven Fried Chicken
Ingredients:
- 1 pound boneless skinless chicken breasts
- 1 large egg, beaten
- 1 cup crushed cornbread stuffing mix
- 1 teaspoon rubbed sage
- salt and black pepper (to taste)
- butter flavored oil spray
- ranch dressing or dip (optional)
Method:
- Preheat oven to 375º F.
- Flatten chicken with mallet between sheets of plastic wrap.
- Lightly beat egg in a shallow bowl or plate and dip chicken in the egg wash.
- Stir together crushed cornmeal with the rubbed sage.
- Line a baking sheet with foil and place egg-dipped chicken on the foil. Season to taste with salt and black pepper.
- Press cornmeal crumbs onto chicken, then spray liberally with butter flavored spray, then flip the chicken over and do the other side.
- Bake the chicken in a preheated oven for 30 minutes, turning over once midway through baking time, until golden and lightly browned on both sides.
- Cut into strips if you wish and serve with ranch dressing/dip as desired.
