Simple Cucumber and Tomato Salad

One of my standby prepared salads for Summer as well as slimming down. It goes together fast, and keeps in the fridge as an easy standby. Sometimes if I am a bit peckish before I start dinner, I will have a small bowl to tide me over, especially if I am going shopping for groceries. It is never a good idea to go into a market hungry. Your cart will become a junk food magnet, when willpower to eat healthy falls by the wayside to new and embarrassing lows. I know it does for me.

I use Splenda in this and that may not be everyone’s favorite, since not everyone cares for the way it is formulated, but feel free to put in whichever kind you like- sugar, honey, agave syrup, stevia…just be sure to reconfigure the amount because Splenda does not substitute 1:1 for every sweetener. Taste as you go along if you are not sure, starting small, and adding a little more as needed until it is as you like it.

Simple Cucumber and Tomato Salad
Ingredients:

  • 1 pound baby seedless cucumbers, roll cut
  • 12 ounces ripe cherry tomatoes, halved
  • 1/3 cup chopped red onion
  • 1 tablespoon chopped fresh parsley
  • 1/4 cup extra virgin olive oil
  • 1/4 cup salad vinegar (I use apple cider vinegar or wine vinegar)
  • 1/3 cup Splenda granular (or substitute appropriate amount of sweetener you prefer)
  • 1/2 teaspoon dried dill weed
  • salt and black pepper to taste

Method:

  1. Stir together and marinate for several hours before serving.
