Forget toasting them on a campfire. We’ve got chocolate. And we have them waving a patriotic rainbow of red, white and blue for Memorial Day, Independence Day, or whenever you want to show some good old-fashioned American pride.

Easy White Chocolate Covered Marshmallows

Memorial Day is here. Honor the memories of those who fell while paying the highest price to support the Constitution of the United States with some soft, fluffy marshmallows dipped in colorful white chocolate and prepared with love, appreciation and….sprinkles.

The usual summer holiday offerings, if they try to follow the colors of the flag, can be a bit tired. Because? Let’s face it. There are only so many things one can do with red, white and blue before we come back around for repeats. I’m sure we have all eaten more than our share of strawberry, blueberry, and cream cheese-pineapple Jello parfaits. And okay, we did the strawberry kebabs with a blueberry and mini-marshmallow too. We have seen cakes iced like a flag. Trail mix with red, white and blue M&Ms. Mixed drinks flavored with an array of strawberries,  pineapple, and blue curacao. And I have to admit, I have seen some pretty stunning desserts which do a great honor to the day with fondant cleverly made into patriotic works of art. All those are great, and the fondant cakes can be a little bit more than I would personally like to invest in the dinner table. I mean, I do care about the memorial of our lost veterans, but even as a food blogger, I am not so talented I want to spend two weeks on dessert.

Which brings me to what I have decided to do. I know many in my family love chocolate covered marshmallows, and melting chocolate is wicked easy with a microwave. And with a few dabs of paste food coloring, making the (white) chocolate shine red and blue is a simple job. And since the center of the marshmallow is white, that is one less job.

Keep these chilled (my daughter actually likes chocolate covered marshmallows frozen,  so that is an idea too) and you have an easily prepared and different kind of dessert, one small enough everyone has room for a bite.

And remember, just because I did these in red, white and blue, Wilton makes quite an array of paste food coloring, so the sky is the limit for having these on other holidays, such as Christmas, with red & green, Thanksgiving, with perhaps yellow and orange, Halloween, with orange and black, Valentines Day with red and white, and weddings, with the theme colors, or if you are huge Green Bay Packer fans (as we are) then green & gold will be the colors of the day. I can’t recommend the colors of the opposing teams, but what you do behind my back on game day has a possibility that I may never find out about it. Ha ha!

We will be spending our weekend enjoying these marshmallows, as well as some barbecue (of course!) and going to several local cultural events, such as Taste of Cincinnati (a local food festival) and a butterfly show at the local nature conservancy. In years past, we would visit the graves of family members (and also barbecue later in the day). Living in Cincinnati, we have no graves to visit since possibly no one in my family has lived in this part of Ohio in about two hundred years. I did have family going back into northeast Ohio and then Pennsylvania in years going as far back as the American Revolution. Then the westward migration began. Many Ohio towns were founded in the years following the revolution, with the majority being around 1800-1820. I imagine that many families left the places that were filled with the hard fought battles and bloody memories. Left behind the fallen and set out to new horizons. As a country, we have always looked forward, moved on, did the groundbreaking for another era. Perhaps it is reason to remind us that we do need to have a Memorial Day, a time, to pause and reflect and look back to those who paid the price for what we have, who did the heavy lifting to enable us to live the American Dream. So even though we don’t visit grave sites here in Ohio, we do stop and give a moment of silence, thoughtful and thankful regard to anyone who gave it all for us, whether they were in our family or not. Many soldiers were buried forgotten, in abandoned grave sites or even in marked graves but no one ever knowing who they actually were. But we can remember it is not a place we visit to honor our warriors, it is a place we visit in the heart, where the fierce fires still burn bright and our patriotism lives forever.

Easy White Chocolate Covered Marshmallows

  • Servings: 30

Easy White Chocolate Covered Marshmallows
Ingredients:

  • 12 ounces white chocolate chips
  • 2 -4 tablespoons shortening
  • 24 ounces jumbo marshmallows
  • red and blue gel food coloring
  • 4 jars red, white and blue jimmies or sprinkles (optional)
  • wooden skewers
  • wax paper or nonstick foil

Method:

  1. Place half the white chocolate chips in a microwave safe measuring cup or bowl with one tablespoon shortening and microwave for one minute and stir.
  2. Microwave in thirty second intervals, stirring after each round, until chocolate is melted and smooth.
  3. Add some of the gel coloring (in a small amount, as it is very concentrated) and stir in, until desired color is achieved. If mixture tries to become thick, add a little more shortening and heat again briefly, then stir to mix.
  4. Place marshmallows on a skewer and dip into melted white choclate with color on one end, tapping off excess.
  5. Dip coated end into sprinkles, then set on waxed paper or nonstick foil and allow to cool and set (an hour or more) or if you want to do it more quickly, chill them until chocolate is set.
  6. Repeat process with remaining chips and the other color of gel food coloring, dipping the other end and adding sprinkles.
  7. Allow to rest or chill until set.

  1. These cute marshmallows look like the perfect addition to any summer holiday BBQ or party! I have been to Taste of Cincinnati in the past. It is always fun, but crowded! Have a great Memorial Day!

    • We got down to Taste yesterday and enjoyed some of our favorite food trucks. We did manage to find some shade and some seating when we needed it, so not too crowded.
