I don’t recall if I told anyone yet, but recently I joined a group of fellow bloggers called the Secret Recipe Club. In the group you are assigned a blog each month, and then choose a recipe to tag, cook and blog. I had been wanting to join this group for quite sometime now, as I am fond of tagging and preparing recipes from people I know online, and have been doing so for years. But even so, my application with the group got lost last year and I forgot about it as well. But recently remembering it and inquiring again, I was accepted into the group right away. Being a first time participant, I can say I am really stoked about trying someone else’s recipe, which to be truthful, I often find little time to do when I make so many of my own recipes. But I do find the time when needed and I hope this is just the beginning of a long and lasting relationship between Palatable Pastime and the group. I know my family, friends and other readers will be quite excited to take a peek at all the good things that are in store. And what good things?
This month I was assigned the blog The Spiffy Cookie. It is written by Erin. I must tell you that browsing the blog, I came across recipe after recipe of tantalizing ideas. I felt like a kid on Christmas morning. And in fact, there are quite a few holiday recipes in there that I will be returning to for Christmas morning as well. It was so hard to decide! But finally I settled on the Grilled Chicken Gyro salad with Pita Croutons.
I picked a winner.

It may seem like a lot of work to look at, but this is a one-dish meal, that is made in components the same way you would any dinner menu. I don’t have an exact time down for how long it took me to prepare (I was making watermelon rind pickles at the same time anyway). But if I can do pickles and get this on the table in about the same time, most people shouldn’t have any worries.

The salad itself is like a Greek salad with souvlaki and a tzatziki dressing (gyro sauce) which really is more like a salad dressing than a typical tzatziki sauce. The croutons are from pita bits which are baked quite easily for just a few minutes until they are crisp.
I served my salads in noodle bowls and it was quite filling. No room for anything else but maybe wine (isn’t there always room for wine?)

Grilled Chicken Gyro Salad with Pita Croutons
Chicken and Marinade Ingredients:

  • 1.25 pounds boneless chicken breasts, cut into 1-inch cubes
  • 4  cloves garlic, minced
  • 1 lemon, juiced
  • 2 teaspoons red wine vinegar
  • 2 tablespoons extra-virgin olive oil
  • 2-3 tablespoons plain Greek yogurt
  • 1 tablespoon dried oregano
  • soaked bamboo skewers or oiled metal skewers (as needed)

Taztziki Dressing:

  • 1/2 large cucumber, peeled, seeded and grated or finely chopped
  • 1/2 cup plain Greek yogurt
  • 1/2 teaspoon salt
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons  red wine vinegar
  • 2 small garlic cloves, minced
  • 1-1/2 teaspoons dried dill weed
  • 1/2 cup extra-virgin olive oil

Croutons:

  • 2 large or 4 small pita bread, but into 1/2-inch squares
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon sweet paprika
  • salt (to taste)

Salad:

  • 3 romaine hearts, chopped
  • 1/2 of 15 ounce can chickpeas, drained
  • 12 cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/2 large cucumber, peeled and chopped
  • 1/4 cup pitted kalamata olive, sliced if desired
  • 3-4 punces feta cheese, crumbled

  2. Yay I love that salad and am so glad that you did as well. I agree that it seems like a lot of work looking at the recipe but it really does come together easily enough. And yes there is always room for wine 😉

    • I am not one to be agraid of long ingredient lists. Some people don’t like more than 5 ings. but they are missing out on complexity of flavor. Glad I got your blog for my first assignment! I’ll be diving back in there soon!
