I can’t believe that August is almost here! And with it comes that rise in temperatures I always expect. Next week I expect temps to rise over the century mark in the Dog Days of Summer (mid-July to mid-August). so named after Sirius, the Dog-Star, which at this time of year is very bright, usually rises around the same time as the sun, and accompanies some of the most searingly hot days of summer.
So for the end of July, as part of Group D of the Secret Recipe Club, I have been assigned to choose a recipe from Rebekah of the Making Miracles blog. In keeping with summer tradition, I chose her recipe for Ranch Corn on the Cob, a simple recipe for oven roasting corn with an even simpler ranch flavored butter.
It goes great with any type of barbecue, which while visiting at my Dad’s home, we chose to have this along with BBQ baked beans and a St. Louis favorite, barbecued pork steaks. And since I am cooking away from home, I really did want a recipe that was really easy and this did not disappoint.
I had found out sometime last year about the great way of roasting corn in the oven right in the husks. It shucks super easy after cooking, with the silks coming away along with the husks quite easily. The corn is perfectly steamed inside of the husks and this simple butter flavors it perfectly.
Rebekah has a great array of recipes on her blog and I know when I am once again back at home in my own kitchen I will be looking further into her collection which is easily categorized in her index page. She has everything from soup to nuts and I am sure everyone will find a ton of recipes there to Pin and/or save in other ways to have on hand in the weeks and months to come. Ranch Corn on the Cob
Ingredients:
- 4 fresh ears corn on the cob in husk
- 1/4 cup hot melted butter
- 2 teaspoons ranch dressing mix
Method:
- Preheat oven to 425 F.
- Place corn in husk on oven rack and bake for 25-30 minutes.
- Pull back husks and silks, stir dressing mix into hot butter and slather corn as desired.
