Here we are past Thanksgiving on the home stretch towards the end of the year and a variety of winter holidays. And for Sunday Supper, I am posting a cookie recipe that reminds me of old days, being based on the old rum balls recipe.

It is very easy and no-bake. And although it puts together fast, it is best to plan ahead since these can be a bit boozy at first, but mellow as they rest in the refrigerator for up to a couple of weeks. And of course being boozy, probably not the best choice for little kids, but for something for an office holiday party this can be just the thing.

This recipe was inspired by the traditional Rum Balls recipe by Emeril LaGasse.

Amaretto Balls

Amaretto Balls
15 minutes prep

30 minutes chill

Ingredients:

  • 2 cups sifted confectioner’s sugar
  • 2 tablespoons vanilla powder
  • 1/2 teaspoon ground allspice
  • 1/2 cup amaretto liqueur
  • 2 tablespoons corn syrup
  • 2-1/2 cups vanilla wafers, crushed into fine crumbs
  • 1 cup whole toasted almonds, finely chopped

Method:

  1. Use food processor to pulse the vanilla wafer cookies into fine crumbs and set aside.
  2. Use food processor to finely chop toasted almonds.
  3. Whisk together one cup of the sugar, the vanilla powder, allspice, amaretto and corn syrup until smooth.
  4. Stir in the crumbs of vanilla wagers and almonds and stir until it is completely moistened.
  5. Refrigerate dough for half an hour.
  6. Form dough by tablespoons into pressed balls, and roll in remaining confectioner’s sugar.
  7. Store in layers of waxed paper and refrigerate for up to two weeks, allowing it to mellow and improve with time.
