Italian Dinner Feast

My dish is a salad! Since Spring is (almost!) here, and the asparagus is becoming more plentiful I decided to use that, and add in some of my favorite things: fresh tomatoes, toasted pine nuts…and  what better than a basil pesto vinaigrette to stir in?

The resultant salad is quite delicious and is a welcome change from the usual “Italian dressing” tossed salads or small plates of antipasta. My husband gave it a taste, asked for another bite and announce that this would not last long.  I don’t mind. This is another of the prepared salads I like to keep on hand in the fridge. You can let this marinate, but if you do, keep the pine nuts out so they stay extra crisp, but as well, you can also serve it right away, so don’t worry! And this is fast and easy to make too. I hope you enjoy (and that Spring really is almost here!)

Pesto Salad with Asparagus, Tomato and Pine Nuts

Ingredients:

  • 12 ounces fresh asparagus, trimmed and chopped
  • 1/4 cup minced onion
  • 1 roma tomato, chopped
  • 1 teaspoon minced garlic
  • 1/4 cup toasted pine nuts
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons basil pesto
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • salt and black pepper
  • 1 tablespoon shredded fresh basil (for garnish; optional)

Method:

  1. Whisk together the basil pesto, lemon juice, olive oil, salt and pepper in a small bowl, then toss with the asparagus, tomato, onion, garlic,  pine nuts and Parmesan cheese.
  2. Garnish with a little extra basil if you like (it doesn’t really need it).
