Apple-Cinnamon Pancake Mix

#AppleWeek continues today with fun projects using apples. Being a food blog, I naturally gravitate towards crafts that are recipes- in this case apple cinnamon pancake mix in a jar, which makes a great hostess gift for the holidays. You can use any type of Mason jar you like and decorate it as you wish. I prefer a zinc-lidded jar with a primitive wire berry wreath around the neck, very simple. With different jars you can be inspired for other jar decor. Modern jars with elegant ribbons can be nice.  Or even packing the pancake mix in a gift box tied with raffia or other ribbon can be an option. There are lots of ways to do this.

The mix itself takes up around a quart dry measure, and you may need to tamp the container a couple times to settle the mix so it is all in there, but it does fit. You could use nonfat dry milk instead of the buttermilk powder- the choice is really up to you and what is in your pantry. Have fun with it! and don’t forget to clip a print of the tag to tuck in with the jar if giving as a gift. Until tomorrow-

Apple-Cinnamon Pancake Mix

Makes about 14-16 pancakes total (whole jar)

Ingredients:

  • 3 cups all-purpose flour
  • 1/2 cup powdered buttermilk
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 3 tablespoons baking powder
  • 1-1/2 tablespoons ground cinnamon
  • 2 ounces finely chopped dried apple slices
  • 1 Mason jar with lid

Pancake Ingredients:

  • 1-1/2 cups mix
  • 1 egg
  • 2 tablespoons melted butter
  • 5 ounces water or milk

Cider Syrup (optional):

  • 1 cup apple cider
  • 1 cup sugar
  • 1 teaspoon cinnamon  (if you like it spiced)

Method:

  1. Mix ingredients together and pack into jar, tapping to settle ingredients if needed.
  2. To prepare, whisk together butter, egg and water. Add more water if you like thinner pancakes.
  3. Place pancake mix in another bowl, make a well in the center and stir in the liquids just until moistened.
  4. Cook pancakes on heated oiled griddle, turning when bubbles form on top and cooking until golden on both sides.
  5. Serve with pancake syrup. To make cider syrup, heat syrup and cinnamon  with sugar until it dissolves, stirring constantly.
