Chocolate. It’s heaven. But in a cup? Welcome to liquid sin.
This is the finest of my hot cocoa recipes, and I knew right away when I signed up to do #Choctoberfest I wanted it to be my opening salvo. But what’s so special about hot chocolate? Not much maybe until it is infused dark chocolate with milk and cream, done in the French style. Le chocolate chaud, which means, when literally translated, “the hot chocolate”. And you will notice that it doesn’t say anything about cocoa.
I’ve been enjoying these regularly with crafted chocolate from a local chocolatier, down at Findlay market (Maverick Chocolate) where I also discovered a bistro pot, which is a kind of French press that is perfect for making chocolate chaud, mocha, or pressed coffee. And to use that, you put the chocolate squares in the bottom, top up with hot milk (or water as is sometimes used) and start plunging until the immersion is complete. You can also do that with this recipe, although I have left it to the pan on top of the stove, since I realize not everyone has a French press.
What I have discovered about these divine cups of sin is the very rich, smooth and velvety character that is lacking in your typical hot chocolate. The texture is, quite honestly, totally different. It is very definitely rich, and not something I would have every day- but for a special occasion such as a birthday, anniversary, or a holiday such as Christmas, this beverage is without equal.

I’ll probably be moving soon so need to work down my pantry rather than adding to it. You know how it is. It shouldn’t be a big deal. French Hot Chocolate
- 12 fluid ounces whole milk
- 4 fluid ounces heavy cream
- 5.25 ounces Dark (60% Cacao) Chocolate squares
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla
- whipped cream
Method:
- Whisk together the milk, cream, granulated sugar and vanilla until steaming over low heat.
- Add chocolate squares, stirring constantly, until all chocolate has been added and melted, but be careful not to boil or scorch.
- Serve topped with whipped cream.
- Can also make in a Bistro Pot, adding chocolate to the bottom, and pouring sweetened hot milk over the top, and plunging until the chocolate is melted and milk is frothy.
