Snowman poop. This actually happens at the North Pole. We down south down  don’t hear much about it until The Jolly Old Elf himself runs out of coal, and then on particularly naughty years, his surplus supply of Reindeer poop also disappears, no matter how many cookies Mrs. Claus feeds them. So what is Old St. Nick to do when he is overrun by adorably naughty children?

Call Frosty, of course. Frosty always knows what to do.

And by the looks of these snowman poop cookies, children are actually going to work hard at being extra naughty, so if you make these, perhaps you shouldn’t tell them anything about it, but keep them all for yourself. It would, in fact, be the naughty thing to do, so I guess you would deserve it, right?

But if you are feeling particularly generous, you could give these all away, but being kind-hearted,  that  means you won’t be getting any. That is, until you have second thoughts a few weeks from now and make these when you really should be on that January diet. That’s naughty, too. 😉

Snowman Poop - Peppermint Meringue Cookies

Snowman Poop - Peppermint Meringue Cookies

Ingredients:

  • 1-1/3 cups granulated sugar or superfine sugar
  • 4 ounces meringue powder (small jar)
  • 1/2 cup water
  • 1 teaspoon mint extract
  • 1/4 cup finely crushed peppermint candies

Method:

  1. Preheat oven to 250°F.
  2. Pulse granulated sugar in a food processor until fine, or use caster/superfine sugar.
  3. Place meringue powder into a clean, dry bowl of an electric mixer fitted with a wire whip.
  4. Add water and whip on high, pausing to scrape down the bowl if needed, until soft peaks form.
  5. With mixer still running, add the mint extract and then the sugar a little at a time, until stiff peaks form.
  6. Place meringue into a piping bag fitted with 1A-round decorating tip and pipe meringue into mounded circles on a parchment paper lined baking sheet.
  7. Sprinkle meringue cookies with finely crushed  peppermint candy.
  8. Bake for 45-50 minutes, or until firm and crisp.
  9. Remove from the oven and let meringue cookies cool on the pans for one hour.
  10. Peel meringue cookies off parchment and store in a sealed container.
  11. Print gift tag for Snowman Poop.
