This month for #FilltheCookieJar we are gearing up for the return of students to school in a few short weeks with some ideas for back to school cookies.

I thought  I would make my offering another shortbread, this time flavored with banana, dressed up as pencil bag rulers and call them “Teachers Rule”. These would be great for the lunchbox or even as a little thank you for the teacher after a hard day teaching.

Have you seen that commercial on tv where the disheveled schoolteacher kvetches about needing a vacation? She won’t be getting one for awhile with the new school year just getting ready to start, but maybe one of these cookies can take the edge off.

Or not. Teachers have my full respect. I was a teacher’s aide in high school for third graders. That entailed helping grade a lot of papers. I saw what went on. Well, I didn’t make it to the second year in that program, and I really like kids! LOL!

Anyway, don’t mind my homemade look on these cookies. I’ve seen the video where that blogger does the detailed icing work on cookies, including a detailed motif of reindeer, frills and whatnot. I was in awe. But. I don’t care if I am not the Renoir of baking decor.

My cookies taste good, I had fun making them, and trust me, if your kids help, I doubt either you or they will do much better. And if you do? Post your pics in my Facebook Group so everyone can enjoy them! 🙂

Besides, I didn’t get these done until tonight, and it was midnight and the icing was still tacky. I had a real busy day and just rolling out  of a holiday weekend, I think I need another holiday to catch up! How about you?

Teachers Rule CookiesOh and I know it seems the banana extract seems excessive, but that’s how it turned out. The banana flavor really wasn’t coming through very strong until I added more.   So it’s not overloaded or anything. I used the black candy marker on mine (Wilton) as it seemed a little easier than the icing,   but you can decide what you’d like to go with.

Not sure what’s on for tomorrow. My next scheduled post is for Sunday Supper this weekend when I post  my recipe for Prickly Pear Margaritas with homemade prickly pear syrup. It has such a pretty color.   Wait until you see it! 😀 But I will probably have something up again before Sunday, but until then-

Ingredients
  

  • 6 tablespoons unsalted butter
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tablespoon plain Greek yogurt or sour cream
  • 2 teaspoons banana extract
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1-3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • bottled yellow cookie icing (Wilton)
  • black candy marking pens or black tube icing

Instructions
 

  • Cream together butter and sugar in an electric mixer.
  • Mix in egg, yogurt, vanilla and banana extract until smooth.
  • Sift together the cinnamon, flour, baking powder, and salt.
  • Add flour mixture gradually to mixer until a smooth dough forms.
  • Turn out dough onto parchment paper.
  • Knead softly to make a smooth ball, then cover with another piece of parchment and roll out dough to 3/8″ thick.
  • Chill dough sandwiched between parchment on a baking pan for thirty minutes.
  • While dough is chilling, preheat oven to 350ºF.
  • Remove pan of dough from fridge,  lift off the top sheet of parchment and place it on another baking sheet.
  • Cut dough into rectangles using a rectangular cookie cutter or freehand with a knife, and place cookie cut outs onto the parchment lined baking sheet.
  • Bake cookies for 10-14 minutes or until cookies are firm and just starting to brown around the edges.
  • Cool cookies on the parchment sheet slid onto a wire rack.
  • If you work ahead with a second sheet of cookies,  keep the cut out cookies chilled until time to bake or it will shorten the baking time.
  • When cookies are cool, warm icing according to bottle instructions, then outline cookies with a thin line of yellow, then allow to set for at least 45 minutes, then fill  in the outline with more yellow, smoothing out with a toothpick.
  • Allow icing to completely dry (may take longer than the 45  minutes), then draw on ruler  markers with a candy writing pen or black tube icing.

  1. I think I know what my son’s 4th grade teacher will be getting on the first day of school. I really need to get those edible markers because I couldn’t do that with frosting.
