Cranberry Pecan Granola

For my third offering for #BacktoSchool recipes I chose to make granola, which I made with cranberries and pecans. It is good as a small bagged snack or as a topping for yogurt.

Forgive that I am not adding more write-up as there has been a death in the family, and I just wanted to get this up for now, since I am posting with a blogging group.

Cranberry Pecan Granola

  • Servings: 16

Cranberry Pecan Granola
Yield: 2 dry quarts

Ingredients:

  • 3 cups old-fashioned  oats
  • 2 cups chopped pecans
  • 1 cup craisins or dried sweetened cranberries
  • 1/2 cup  sweetened flaked coconut
  • 1/4 cup chopped candied ginger
  • 1/3 cup light brown sugar
  • 1/2 teaspoon salt
  • 1  cup pure maple syrup,  divided
  • 4 tablespoons melted butter
  • 1 teaspoon vanilla extract

Method:

  1. Preheat oven to 250°F.
  2. Stir together the dry ingredients in a mixing bowl.
  3. Stir vanilla into the butter.
  4. Drizzle granola with butter  mix and 1/3 cup of  the maple syrup and stir to  combine, until oats are at least all a little bit damp.
  5. Line a baking sheet with nonstick foil and spread the granola on it.
  6. Bake for 75  minutes, stirring  about every 15-20 minutes or until  granola  is browned.
  7. Remove from  oven,  drizzle with  an additional 2/3 cup maple syrup, and stir to blend.
  8. Put back on the foiled pan and  bake 20 minutes more
  9. Allow mix to cool on  pan without stirring. 
  10. When  cool, crumble lightly leaving  some granola clusters intact.
  11. Store in an airtight container.
