This week for Sunday Supper the focus is on simple sandwiches, and I chose to offer my recipe for a clean eating type smoked salmon on croissant.

This sandwich came about just because of the combination of things I had on hand to use up. I had meant my croissant for breakfast but stole it for lunch instead. The whipped cream cheese has such a lighter texture- I recommend it. And you can add ingredients as you like- you know how much cuke and onion and lettuce you want. I am  just happy that it doesn’t need mayo- just fresh ingredients, straight up.

And I am not certain that I ever put smoked salmon on a sandwich like this before, although I don’t know why not. I have had salmon spread as a schmear on bagels many times. And lots of spread on crackers or crisp bread. And of course grilled salmon as a sandwich many times.

But for hot weather it’s nice that this is cold, and also that it comes together so quickly. I hope it is one you enjoy.

Smoked Salmon on Croissant
Ingredients:

  • 2 freshly baked croissants, split
  • 4 ounces thinly sliced smoked salmon
  • 3-4 slices bacon, cooked crisp
  • 2 hard cooked eggs, sliced
  • 1/3 cup whipped cream cheese or soft cream cheese
  • 1/2-1 ripe avocado, sliced
  • red leaf lettuce
  • thinly sliced English cucumber
  • thinly sliced red onion
  • fresh dill sprigs

Method:

  1. Place ingredients on sliced croissant as desired.
