Easy Meatloaf Meatballs

This week for Sunday Supper the focus is on back to school dinners.

I always think  of back to school as  a busier time, with so many things the kids have to do from extra-curricular activities to getting their homework done to getting to bed  on time so they can wake fresh in the morning.

And parents know the bulk of the hawking over that falls on them. So to keep things running smoothly, easier dinners for the weekday are in order! Short, simple and sweet.

So I decided to share my meatballs version of my signature meatloaf,  which takes the meatloaf and cooks it in half the time, keeping all the flavor.

I  covered mine with a bit of barbecue sauce, but you could just as easily go for a tomato sauce or jarred  gravy. And with the meatloaf and the bbq- I like to serve it with simple potatoes gratin, or perhaps something like mashed if you are using gravy. Side salads are always a pleasure or a plate of raw veggies and tomato slices like Mom always loved. With gardens still going that is always a good choice.

Easy Meatloaf Meatballs

  • Servings: 4-6

Easy Meatloaf Meatballs
Ingredients:

  • 1 pound ground beef
  • 1 large egg, lightly beaten
  • 1-1/2 cups soft bread crumbs
  • 1 tablespoon dried minced onion
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup milk
  • 1 cup barbecue sauce

Method:

  1. Preheat oven to 350°F.
  2. Mix together the ground beef, beaten egg, soft bread crumbs, dried minced onion, garlic powder, salt and pepper with milk to form meat loaf mixture, adjusting slightly more or less milk depending on how wet the ground beef is. 
  3. Spray muffin tins with nonstick spray, then fill cavities with 1/3 cup mixture shaped into a ball.
  4. Bake for 25 minutes or until internal temperature is °F., then drain off any fat.
  5. Cover meatballs with barbecue sauce and bake for 5 minutes more.

  1. Oh this recipe is a keeper for sure! I love the idea of mashed potatoes and gravy to go with these. Yum!!
