Welcome to #WaffleWeek2017! Today I am sharing a favorite waffle recipe made with horchata and tender sauteed autumn apples for the topping.

Horchata, if you haven’t tried it, is an agua fresca type drink made from rice and cinnamon, which is sweetened as well.  Some versions also include almonds in addition to the rice. It has a light milky flavor, and if you are looking for a good milk-free recipe (use oil instead of butter and non-dairy topping instead of whipped cream for that) for breakfast this is perfect.

I am ok with lactose, but I do like having this one for the flavor of the horchata. And since horchata and cinnamon go hand in hand, pairing them with an apple topping seemed the way to go and you know I love having fried apples as a topping, especially on things like Dutch baby pancakes or just eating them the way they are cooked at Cracker Barrel.

Cincinnati, my current home town, holds the largest American version of it (Zinzinnati Oktoberfest) so you can imagine we get pretty excited about it. For the event, I will be sharing my version of Chicken Schnitzel with Dunkelweisen Sauce, a specialty of the local restaurant Mecklenburg Gardens.

Cinnamon Horchata Waffles with Apple Topping

  • Servings: 5-6

Cinnamon Horchata Waffles with Apple Topping
Yield: 10-12 waffles (depending on size)

Waffle Ingredients:

  • 2 large eggs
  • 2 cups all-purpose flour
  • 1/2 cup cooled melted butter or oil
  • 15 ounces prepared horchata (I used bottled)
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 4  teaspoons baking powder
  • 1  tablespoon granulated sugar

Apple Topping ingredients:

  • 6-8 med-large gala apples, peeled, cored and sliced
  • 1/4 cup butter
  • 3 cups apple cider
  • 2 teaspoons cinnamon
  • 1 cup brown sugar
  • 2 tablespoons cornstarch

Other:

  • whipped cream

Method

  1. To prepare topping, prep the apples and place in a skillet with the butter and saute for a 10-15 minutes  or until apples become tender, then stir in the remaining ingredients (whisk the cornstarch into the cider so it doesn’t lump) and simmer, stirring, until mixture thickens. Keep warm.
  2. To prepare the waffles, whisk  together the waffle ingredients to make a batter.
  3. Preheat the waffle iron and add enough batter to evenly cover the bottom part; close lid and cook until waffles are browned and pretty much stop steaming.
  4. Serve waffles with apple topping and whipped cream.
