Naked Egg Breakfast Tacos is my recipe of the day. I first posted this recipe some years ago now. But have returned to it to update with a new ingredient available now.

Naked Egg Breakfast Tacos (Taco Bell Copycat)

I also know as a food blogger I have a wealth of taco recipes under my belt. But every girl needs a day off now and then, and as far as lunches go, if you want a taco crispy, that can be tough to brown bag.

While we all love tacos for lunch and there is cause to jump for joy and have a taco for breakfast too. So today I am sharing my version of Taco Bell’s Naked Egg Breakfast taco which they used  to make, which is in fact, an egg taco made with premade Egglife egg white wraps.

You can make these with your choice of meats. I  used bacon in this one. But will be trying some more with cooked crumbled chorizo. You can, of course, fill yours with whatever  you like. Nothing at all wrong with cooking off some breakfast sausage, stealing a little bit for your taco then saving the rest for use in sausage gravy.

It’s all good. Invite some friends for brunch this holiday season!

Equipment

  • nonstick skillet

Ingredients
  

  • 2 Egglife original egg white wraps
  • 1-2 tablespoons butter
  • 2/3 cup diced cooked potatoes I used Simply Potatoes brand diced
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup crumbled cooked bacon
  • 1/4 cup shredded Mexican blend cheese
  • 1/4 cup nacho cheese sauce
  • 2 tablespoons fresh jalapeno sliced
  • 1/8 teaspoon chili powder

Instructions
 

  • Heat butter in a skillet and add potatoes, cumin, salt and black pepper.
  • Cook until browned and turn out of pan.
  • Add Egglife wrap to the skillet and heat until lightly browned and firm; repeat with the other one.
  • Fill wrap with potatoes, cheese, cheese sauce and top with jalapeno slices and a sprinkle of chili powder.
  • Makes 2 servings/tacos.
