Ham and Cheese Casserole (Spoon Bread) is my recipe for #SundaySupper this week, which is all about Holiday Casserole Recipes. I was going to post my version of Au Gratin Potatoes–but I have seen too many of those floating around so wanted to offer something with more variety.

This recipe goes by several names in its basic version: corn casserole, corn pudding, or spoon bread. The basic premise is that it is a lot like  corn bread, except it is extremely moist and has a more pudding-like texture. Which is why they sometimes call it spoon bread, since you almost need a spoon to get it out of the pan. To me, it is sort of like a bread pudding made with cornbread.

As yet, I haven’t seen any  particular variation on the corn casserole this way with the ham, although I have seen it with cheese. But ham seemed to me to be a good addition. I use the ham diced very small, almost as for ham salad. Keeping it smaller helps  it disperse into the bread without sinking.

I also added the chives- I  love them!  And having just got the summer harvest of them dried I will be using them off and on  in quite a few recipes I think! (Although my fav use for chives besides jacket potatoes  is in scrambled eggs)

I often enjoy having this during the year with barbecue, as it is locally popular. Sometimes we have bbq with johnny cakes also  (when not having something like corn muffins or cornbread sticks), but this casserole is also good. But the most popular time is at Thanksgiving, I guess because it is more decadent than corn bread, and it goes smashingly well with baked chicken or roast turkey.

This is  lightly sweet, not quite as sweet as some of the sweeter versions of cornbread, but certainly not like the cornbread I serve with my soup beans and ham. I think it is a nice balance between the two extremes which does make it great for the turkey. The corn pudding is also a great alternative for cornbread dressing/stuffing or the usual bread and celery version of that, but in our house, just like the sweet potato casserole, have one, I’d have to serve them all. And not to forget my daughter’s fav which is mashed and gravy. Her heart is broken if it’s not there.

Ham & Cheese Corn Casserole (Spoon Bread)

  • Servings: 9

Ham and Cheese Corn Casserole
Ingredients:

  • 1 (8-3/4 ounce can) whole-kernel corn, drained
  • 1 (8-3/4 ounce can) cream-style corn, undrained
  • 1/2 cup finely diced ham
  • 1 large egg, lightly beaten
  • 4 tablespoons melted butter, cooled
  • 1 cup sour cream
  • 4 ounces shredded cheddar cheese
  • 1 teaspoon dried chives
  • 1/4 teaspoon black pepper
  • 1 (8-1/2 ounce box) Jiffy corn muffin mix

Method:

  1. Preheat oven to  350°F.
  2. Liberally grease a 8×8-inch square baking pan.
  3. Mix the ingredients for the corn casserole together and pour into the prepared baking pan.
  4. Bake for 50-60 minutes or until  set.
