Blueberry Oatmeal Chocolate Chip Cookies

The Ready Set Cook cooking challenge is being continued in one of my cooking groups, and in this second part, I am posting this recipe for Blueberry Oatmeal Chocolate Chip Cookies.

If you recall, a couple weeks ago I told you about #RSC, in that I have been presented with a limited list of cooking ingredients and am confined to that to develop recipes. It’s sort of like a chopped basket.

My Curried Chicken Lollipops appear to be the most well received, although  I like them all. I think the ease of that recipe made it popular.

For the second round, the ingredients and courses have changed. The object is to select a course, and create a recipe using one of the main ingredients and anything from the pantry list but nothing else. I wonder…what would you have made with these?

As I play, I get to create one recipe per course category.  The cookies today represent my offering for desserts. I will be posting my breakfast, main dish, and condiment recipes in the coming days. Of course, I am only obligated to create one recipe per round, but I have such fun with it I do as many as I can!

Blueberry Oatmeal Chocolate Chip CookiesI hope you enjoy these as much as we did here at my home. The blueberries in these are not overwhelming- similar to using raisins except with a brighter fruity flavor. Oatmeal cookies are always one of my favorite cookies. And having the chocolate in them sets them over the top, I think, especially since chocolate chip cookies are another favorite of mine. What kind of cookies do you like?

Blueberry Oatmeal Chocolate Chip Cookies

Blueberry Oatmeal Chocolate Chip Cookies
Ingredients:

  • 1-1/2 cups brown sugar
  • 1 cup unsalted butter, at room temperature
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1-1/2 cups all-purpose flour
  • 1/2  cup semi-sweet mini chocolate chips
  • 1/2 cup dried blueberries
  • 1-1/2  cups old-fashioned oats
  • 1/2 cup walnuts, chopped
  1. Preheat oven to 350°F.
  2. Cream together brown sugar and butter until smooth.
  3. Add vanilla and egg, stir until blended.
  4. Add baking soda, salt and flour; stir to incorporate.
  5. Stir in  the old-fashioned oats, chocolate chips, dried blueberries and chopped walnuts.
  6. Use a one tablespoon cookie scoop to measure dough  and place on a silpat or parchment lined cookie sheet.
  7. Bake cookies about 12 minutes, then cool on pan five minutes before moving to a wire rack to finish cooling.

  1. Thank you for sharing this wonderful recipe Sue. The cookies are amazing. Made as written but omitted the nuts due to my hubby’s allergy. Excellent use of game ingredients. So happy that I tried these, they will be enjoyed often. Made for RSC 2018. BK
