Roasted Sweet Potatoes with Praline Syrup

It’s National Pecan Day and today I am sharing my recipe for roasted sweet potatoes with praline syrup.

We love to have sweet potatoes with barbecue, or sometimes in place of baked potatoes with steak, or at Thanksgiving as an alternative to sweet potato casserole.

We’ve often enjoyed sweet potatoes with the ubiquitous butter, brown sugar and cinnamon topping commonly found at restaurants, picnics, and family get-togethers. This recipe takes things to another level altogether, though. The brown sugar takes on a deeply caramelized flavor, and the pecans add both a delicious and textural component. All that and it only takes a few minutes to put together; not really much more trouble than  sprinkling the brown sugar. Easy peasy and I hope you enjoy!

You can see the praline sauce in the little pitcher. Make sure you make enough for everyone’s sweet potato. I figure on a few tablespoons per potato, but mine were also on the small side. The huge potatoes may need a bit more. But this is easy to scale and all takes the same amount of time.

Roasted Sweet Potatoes with Praline Syrup

Roasted Sweet Potatoes with Praline Syrup
Recipe yield: 3/4 cup praline syrup

Ingredients:

  • 4 sweet potatoes
  • 3/4 cup brown sugar
  • 1/4 cup milk
  • 2 tablespoons butter
  • 1/8 teaspoon cinnamon
  • 1/2 cup chopped toasted pecans

Method:

  1. Preheat oven to 375°F.
  2. Poke a few holes in sweet potatoes with a fork, then wrap each in foil.
  3. Bake wrapped potatoes for 60-75 minutes or until fork-tender.
  4. While potatoes are baking, stir together the other ingredients except pecans in a small saucepan.
  5. Bring mixture to a boil, stirring, and let boil one minute (or until it foams).
  6. Stir in  the pecans and let cool.
  7. Serve sweet potatoes topped with praline syrup.
