Spooky Spider  Chocolate Chip Cookies

Spooky Spider Chocolate Chip Cookies

  • Servings: 60
  • Difficulty: easy

Yield: 5 dozen cookies

Ingredients:

  • 1 cup Imperial brand light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable shortening
  • 1/2 cup unsalted butter, at room temperature
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon  coffee flavored extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour
  • 10 ounces mini semi-sweet chocolate morsels
  • 1/4 cup Halloween or autumn cookie sprinkles
  • 5 dozen (Wilton) black or orange candy melt wafers
  • Cookie Icing (Wilton) in black, orange, and/or red

Method:

  1. Preheat oven to 375°F.
  2. Cream together the light brown sugar, granulated sugar, shortening and butter until smooth.
  3. Add eggs one at a time, mixing well after each addition.
  4. Add extracts, baking soda, and salt, mixing thoroughly.
  5. Add flour gradually until  it is all incorporated.
  6. Fold the mini morsels and Halloween sprinkles into the dough.
  7. Using a one-tablespoon sized cookie scoop, place dough balls onto a silpat lined cookie sheet.
  8. Press a candy melting wafer onto dough balls,  pressing down firmly.
  9. Bake cookies for 9-11 minutes or until lightly browned around the edges.
  10. Cool on pan five minutes, then finish cooling on a wire rack. Repeat with remaining dough until  it is used up.
  11. After the cookies cool, use heated cookie icing to draw legs on the spiders.
  12. Dot eyes onto spiders using icing as well;  I found ponding a small amount on paper and using a toothpick or wooden  skewer to apply the dots worked better than trying to dot it on directly from the bottle.
  13. Allow cookies to dry and set up for 30-45 minutes.
