My recipe of the day is for Hawaiian Teriyaki Burgers, which were such a Big Kahuna of a dinner that I couldn’t even finish the sandwich; made as two burgers, they clocked in at almost two-thirds pound. But you can shrink those down however you like. It’s the way of burgers, large or small? You decide.
It’s burger month and that means every blogger on earth will be posting a burger recipe or three. I mean, really. How many ways can you think of to make a burger? *laughs* My answer to that is…how much time do you have? I could talk burgers all night, and well into next week.

The Hawaiian teriyaki burgers as you will see are not simply 100% ground beef, but the flavors are made more complex with the addition of either ground ham, or ground spam. You know the Hawaiians love spam, but not everyone does, so the choice is yours.
The burgers rest their laurels on a Hawaiian bun, with Swiss cheese, grilled onions, grilled pineapple, and bathed in teriyaki sauce.
Just try to get your mouth around this one! I dare ya’!
Along with my recipe for Hawaiian Teriyaki Burgers I am including here a recipe I developed some time back as a Teriyaki Grilling Glaze and posted at Recipezazz, which if you like making your sauces from scratch, you can feel free to use in this recipe, although I did just use the Kona Coast bottled stuff.
Teriyaki Grilling Glaze
1/2 cup pineapple juice
1/2 cup soy sauce
1 tablespoon wine (dry white wine or rice wine)
1 teaspoon fresh lime juice
6 tablespoons brown sugar
1 scallion, sliced
1 tablespoon ginger paste
2 teaspoons garlic paste
1 teaspoon toasted sesame oil
1 tablespoon cornstarch
Whisk together ingredients in a small saucepan and bring to a boil.
Reduce heat and stir until mixture thickens and can coat the back of a spoon; allow to cool before using.
Brush on meats a few minutes before they get done to allow the glaze to stick and set.
Hawaiian Teriyaki Burgers
- Burger Ingredients:
- 12 ounces ground chuck
- 4 ounces ground ham or ground spam I used ham
- 1 tablespoon ginger paste
- 1 teaspoon minced garlic
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon Kona Coast Island Teriyaki teriyaki sauce or homemade
- 1 tablespoon sambal chili paste for spicy
- Additional Ingredients:
- 2-4 Hawaiian sandwich rolls
- 1 red onion sliced
- 1 fresh pineapple peeled, cored and sliced (you'll have some extra)
- 2 tablespoons brown sugar
- 2-4 slices Swiss cheese
- 1/2 cup additional teriyaki sauce
- Mix ingredients for burgers thoroughly and shape into burger patties, pressing a divot into the center of each.
- Grill onions on a grill sheet until caramelized.
- Grill pineapple slices sprinkled with a little bit of brown sugar until browned.
- Grill burger patties until cooked as well as you like them, basting with teriyaki sauce.
- Build burgers on buns with melted Swiss cheese, a pineapple slice and some of the onion.
