But back to my  sandwich, because I know you guys are hungry and  need to catch the school bus.

Western Omelet Breakfast Sandwich

The western omelet breakfast sandwich is my take on  the western omelet with  peppers,  onion,  ham and cheese, except this one is made much simpler and of course the bonus is that you can eat it on the run.

It cooks in a few short minutes in the Hamilton  beach breakfast sandwich maker which is surprisingly simple to use. First you get everything  together and the ingredients stirred up in a bowl.

The sandwich maker  heats up really fast and the green light comes on to let you know  it’s ready.

The  way it works is that it has a set of tiers that compartmentalize the sandwich components, and you can simply add in the egg after putting  in the bottom  english muffin and toppings.

It goes on a plate that is hinged and swings over when the sandwich is finished cooking  to allow the egg to drop  down onto the other fillings and get the plate out.

I bet you’re wondering how the egg doesn’t just run everywhere. And it is important that the sandwich maker be heated up empty (and not with the ingredients already in there), so the plates heat adequately and as soon as the egg contacts the nonstick metal, it cooks enough to stay  in place.

Because it is hot, this is a machine that only older children who can handle a hot skillet should be allowed to use, in case you were wondering. Little ones would likely burn themselves accidentally, the same  as if they were using a hot skillet on a stove.

But the sandwich maker is lightning  fast to heat, and takes only 4-5 minutes to cook.

You can see that when it is closed up it browns the muffin nicely.  4-1/2 minutes got me this nice golden color, and a full five minutes got me one just slightly more toasty for the big guy who  likes them that way.

You lift up each section  one at a time  so you don’t  pull your sandwich apart. And everything is in just the right place, including that  perfectly cooked egg.

Ingredients
  

Ingredients:

  • 4 large eggs lightly beaten
  • 2 ounce jar diced pimento peppers drained and minced
  • 1 teaspoons dried chives
  • salt and black pepper to taste
  • 3 ounces sliced cheddar cheese 4 slices
  • 6 ounces deli sliced ham
  • nonstick cooking spray
  • 4 English muffins split

Instructions
 

Method:

  • Spray rings of sandwich maker lightly with nonstick cooking spray and preheat empty until the green light comes on.
  • Whisk together eggs, minced pimentos, chives, salt and pepper.
  • Fold corners of cheese slices towards the center so they will fit into the ring.
  • Open sandwich maker and place bottom half of muffin in the sandwich maker and top with cheese, then ham.
  • Swing the egg section over that and pour 1/3 cup of the egg mix into the maker.
  • Top the raw egg with the remaining half of muffin and close the lid.
  • Set the timer for 4-1/2 minutes.
  • At the completion of cooking, swing out the plate so the egg drops onto the ham in the sandwich.
  • Carefully lift metal sections to remove the sandwich and enjoy.
