Cantaloupe agua fresca is my recipe of the day.

April has come and gone and now we are in the merry days of May along with the traditionally Americanized celebration of Cinco de Mayo. We all love a celebration and some Mexican food so hey. Why not?

The  agua  fresca simply refers to fresh infused water or ade. There can be many types, such as pineapple or hibiscus. Sometimes lime.  But of course the cantaloupe takes advantage of the sweet golden fruits we always love.

Cantaloupe Agua Fresca

Pureed and then strained in a chinois (for ease) the juice is topped up  with cool water and a squeeze of lime.

Of course you can sweeten this to your taste or use artificial sweetener if you prefer. How much you add will depend on the meon itself, as at different times of year it will taste more or less sweet.

Equipment

  • chinois or strainer

Ingredients
  

  • 1 ripe cantaloupe peeled and seeds scooped out (yield 3-1/2 cups juice)
  • 1/2 cup fresh lime juice about 2
  • 1/2 cup granulated sugar amount to taste

Instructions
 

  • Puree fruit and strain fruit through a chinois or other fine mesh strainer.
  • You should have 3-1/2 cups juice.
  • Stir with sugar and lime and top up a 48-oz. pitcher with water (approximately an equal amount to the juice, around 3 cups).
  • Sugar quantity may vary depending on the season, and if you get the huge Athena cantaloupes in summer, you may have extra juice that you can save for a second batch.
