Bacon Chipotle Deviled Eggs

Bacon chipotle deviled eggs are my recipe of the day with the blogging group “From Our Dinner Table”. We join up once per week to post on a given topic. This week’s focus is on deviled eggs.
I had made a couple of recipes using some chipotle, and this one conveniently finished off what I had in the can. I can usually make a can of chipotle peppers go pretty far.
Bacon and cheddar seems a great way to fill out the flavors. I decided on some powdered cheddar which I have a bag of. If you don’t have that in particular, you can always find it inside a box of blue box mac and cheese. And then just repurpose the noodles in something like soup, mac salad or spaghetti. That way it won’t be such a big purchase for you. And easier to find.

Bacon Chipotle Deviled Eggs
Ingredients
- 6 hard cooked eggs
- 1 chipotle pepper in adobo sauce minced
- 6 tablespoons mayonnaise
- pinch each of salt and black pepper
- 2 slices bacon cooked crisp and crumbled
- 2 teaspoons cheddar cheese powder
- additional bacon bits for garnish
Instructions
- Cook eggs and peel.
- Cut eggs in half; remove yolks and mash.
- Mix yolks with remaining ingredients (except the garnish) until smooth.
- Spoon mix into egg cavities and garnish with extra bacon.
