Spicy Black-Eyed Pea Soup (Instant Pot) is my recipe  of  the day with the blogging group Sunday Funday. We post weekly on  Sundays on various topics.

This  week  we are sharing New Year’s Day lucky recipes. I decided to go for the Instant Pot version of my favorite black-eyed pea soup.

I have been making this recipe for  years using all  sorts of devices and also on the stove. It is easy enough and very stick-to-your ribs. Just serve  some  cornbread and a bottle of hot sauce with it  and you are all set.

Black-Eyed peas are considered to be  one of  the lucky foods to eat on  the first day of the year. I am not really superstitious about that,  but I do  enjoy eating  traditional foods at certain times.

It’s all  part of the holiday for  me. But I  don’t cook this just at New Years but throughout the year.

I have always loved black-eyed peas and field peas among other types  of  beans and legumes (although these are officially peas- just not the green type).

Whenever you  do decide to enjoy this and however, I am  sure you will love it.

Equipment

  • pressure cooker or instant pot

Ingredients
  

  • 1 pound dried black eyed peas (sorted)
  • 4 slices bacon (chopped)
  • 1 cup chopped onion
  • 1 cup diced celery
  • 1 cup diced carrots
  • 4-5 cloves garlic (chopped)
  • 1 tablespoon olive oil
  • 1-2 bay leaves
  • 1 teaspoon dried thyme
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon Cajun spice
  • 8 ounces tomato sauce
  • 1 tablespoon Louisiana hot pepper sauce
  • 1 tablespoon Worcestershire sauce
  • 6 cups ham stock or vegetable broth
  • 13.5 ounces Johnsonville Andouille sausage

Instructions
 

  • Saute the bacon, onion, celery, carrots and garlic in the olive oil in the Instant Pot on the sear setting until the bacon renders out.
  • Add all remaining ingredients except the andouille sausage and stir.
  • Place the lid on, lock and set the valve to closed.
  • Operate on Manual for 45 minutes.
  • When the time is up, use a wooden spoon to move the quick release valve open and let the steam subside completely.
  • While the steam is going down, saute the andouille sausage in a nonstick skillet until browned, then stir into the black eyed peas just before serving.

  2. I keep wanting to like Black eyed peas but so much of the time they’re so bland. This does not look bland at all, and I’m going to try it, soon.
