Chocolate Avocado Walnut Muffins  is my  recipe of the day with the  blogging  group Muffin  Monday. This is  a  recipe  I have had around  for  awhile  but posted  on  another website. I have decided to  bring  it over to the blog to be part of  my larger collection.

These are very moist   muffins,  owing in large part to the avocado  oil  in the fruit. Avocado  has a very mild flavor that blends in. We can debate whether someone  can  taste it or  not- and having eaten these,  I can  tell you  that if someone told you there was avocado in it,  you might think about it and say, “Yes, that’s right.”

But  in  any case the  flavor  is not  strong, in  the same vein that zucchini can be added to muffins and just disappear. I like them because they are essentially oil-free (except  yes,  avocado contains avocado oil).

They aren’t considered diet muffins my any stretch,  but you may enjoy these, as I do. I’ll probably make  some other avocado muffins in the  near future, perhaps savory. Funny how my brain heads straight for bacon. But as a breakfast item, why not? It’s fun to play with your food.

  1. I made a sauce for fish the other day from a cucumber that was starting to get past its best and had the whole family guessing what was in it. Your muffins would be fun for that game as well!

    • My best one was sliding the bhindi masala past my brother. Just the sight of okra would make him gag. I’d stopped by the farm stand when visiting back home (and cooking, obviously) and the okra was just beautiful so I had to add it to the menu. Cooked up the bhindi on the fly as a side and he put it on his plate. I didn’t say anything, just watched curiously. With a little smile. And after it was gone, asked him how the bhindi was. “What’s bhindi?” “Oh that vegetable curry.” “It was DELICIOUS!” “Hey Lar- that was okra you know.”(laughing) You can’t buy the look on his face. Bwahahahahaaaaa! Sue: 1, Brother: 0. *snort* I do curries well, but then again, I have made so many. Now they are officially my secret weapon. 😀

  3. It’s quite sometime that i made chocolate-avocado loaf. Your muffin looks very tempting to me. I love adding walnuts to all my muffins and quick breads. The flavors of your muffin are spot on for me.
