Marinated Bean Salad is my recipe of the day with  the blogging group Eat the World. We post monthly on topics of different cuisine types and then share recipes for those. This month we are discussing and sharing recipes from Vietnam in Southeast Asia.

For my recipe I decided to share my fusion version of a Vietnamese inspired marinated bean salad. This is something I might whip up to go along with something like a banh mi sandwich. Or perhaps as an additional side or starter for something like a stir-fry.

The salad also packs well for brown bag lunches along with things like cold noodle salads.

I did use canned beans in this as I sometimes do when  making marinated bean salads. You can also use long beans which you  may have steamed up and chopped.

Problem with that for me is that I can be very picky about my  Asian long beans. If the market has them and they are limp, I will leave them sitting there. That might mean that occasionally if I want to make a recipe like this, I might have to settle for something  else.

Of course you can also use domestic stringless green beans which you can steam. I’m not a big fan of frozen green beans in this salad.

Thai bean sprout salad is a  light, spicy  and refreshing salad made with fresh mung bean sprouts that can make an interesting side to a stir-fry or curry.

Ingredients
  

  • 1 15.5 ounce can green beans, drained
  • 1 cup sliced bamboo shoots
  • 1/2 cup chopped onion
  • 1 cup chopped mushrooms
  • 1 tablespoon finely grated carrot
  • 1/4 cup sugar or to taste
  • 1 tablespoon fish sauce nam pla
  • 1 tablespoon rice vinegar
  • 1 tablespoon fresh lime juice
  • 2 tablespoons water
  • 2 scallions chopped
  • 1 tablespoon chopped fresh cilantro

Instructions
 

  • Stir together and marinate several hours.
