These gorgeously old-fashioned cookies are chock full  of wholesome oats  and dried strawberry bits for a true berry flavor. Easy to  make, they will be a favorite in your cookie jar or lunch box.

Equipment

  • cookie sheets, parchment or silpat

Ingredients
  

  • 1 cup unsalted butter (at room temperature)
  • 1-1/2 cups brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup strawberry jelly (melted and cooled) (I used microwave)
  • 2 large eggs
  • 2 teaspoons vanilla
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 cups old-fashioned oats
  • 8 ounces dried sweetened strawberries (chopped to raisin size)

Instructions
 

  • Preheat oven to 350F.
  • Mix room temperature butter and sugars together until smooth.
  • Stir in cooled runny jelly, eggs and vanilla.
  • Separately, mix flour, baking soda, baking powder and salt.
  • Add to wet mixture.
  • Stir in the oats and chopped strawberries last.
  • Drop dough by rounded tablespoonfuls onto parchment or silpat lined baking sheets.
  • Bake for 13-15 minutes.
  • Cool on pan a few minutes then finish cooling on a wire rack.

  1. Strawberries are, for sure, the first harbingers of Spring in our neck of the woods. Love those cookies.

  2. I don’t think I’ve ever had strawberry oatmeal cookies, but now I want to try to make these. I know I have some dried strawberries from Trader Joes; so those plus jam will be great additions. Thanks for the inspiration!

    • I was going to get some from Trader Joe’s but there was a huge line outside. I found some at Target of all places.

  3. The Oatmeal Cookies smell great, but have spread very very thin while baking. The picture shows thick cookies.
    I put the rest of the dough in the refrigerator. Will try another batch later.

    • I hope things went well with the chilled batch.
      Not sure what happened. Warm ingredients or a hot pan might be an issue. I’d have to see your chosen ingredients to see if there was a problem there. But I am thinking the jelly was still too warm.
