Broccoli, Ham and Swiss Casserole is my recipe of the day with  the  blogging  group  Sunday Funday. We gather  up  on Sundays to post our fav recipes on different topics. This week we are sharing our best new recipes to repurpose Easter leftovers. If we manage to have any!

I’ve taken my  own leftover ham and mixed it up with healthy broccoli and egg noodles in a Swiss cheese sauce in this comforting hot dish  casserole. Who doesn’t love a noodle supper?

I know whenever  I have a baked ham there is always leftover. Not that I am complaining. I do love having extra for sandwiches, making beans and other things. Especially the ham bone.  It is so full of  flavor and collagen! Perfect for  those beans  or  making soup broth.

This casserole comes together easily using canned soups.  If you prefer, make a thick sauce with stock, evap. milk and  extra chicken base. I am using up canned goods I picked up during covid food shortages. But either way, I am not averse to using cream soups in a recipe.

The result is  a comforting hot dish that paired with some  tossed salad, makes for a very homestyle supper.

Equipment

  • Oblong casserole dish

Ingredients
  

  • 1 medium onion chopped
  • 2 teaspoons minced garlic
  • 2 tablespoons olive oil
  • 21 ounces condensed cream of chicken soup (2 cans, undiluted)
  • 1 cup sour cream
  • 1/2 cup milk
  • 4 ounces diced jarred pimientos
  • 2 tablespoons dried chives
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 12 ounces egg noodles (cooked and drained)
  • 12 ounces diced ham
  • 10.8 ounces frozen chopped broccoli (cooked crisp-tender)
  • 6 ounces shredded Swiss cheese
  • 1-1/2 cups canned crispy fried onions

Instructions
 

  • Preheat oven to 375F.
  • Cook the onions and garlic in the oil until the onion is softened.
  • Stir in the remaining ingredients except the fried onions and place in an oblong casserole dish sprayed with nonstick spray.
  • Bake uncovered for 20 minutes, then top with canned fried onions.
  • Bake an additional ten minutes to brown and crisp the topping.
