Strawberry Banana Buckle is my recipe of the day with the  blogging  group From Our Dinner Table. We get together weekly to post on various topics. This week we are covering coffee cakes, posting our favorite recipes.

I  decided to bake you guys up a strawberry banana buckle. It is chock  full of fresh strawberries with banana slices as well as mashed banana along with a crumbly streusel topping.

Buckles get their name from being traditionally made as light cakes topped with fruit and streusel.  The fruit is placed on top and as it sinks into the batter it creates a buckled, or uneven appearance.

I have mixed the fruits into the batter, as well as soaking the banana slices in lemon juice because of the propensity for both strawberries and banana to have undesirable colors after baking, so we avoided putting those on top.

However, the streusel crumb still gives it a bumpy surface, so all is still good. Topped with an icing drizzle, it is the perfect finishing touch.

Equipment

  • 8x8-inch glass baking pan

Ingredients
  

Cake Batter:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup granulated sugar
  • 3 tablespoons melted butter
  • 1 large egg at room temp
  • 1 teaspoon vanilla
  • 1 spotted ripe banana mashed (1/2 cup)
  • 1 firm banana
  • 1 lemon juice of (4 tablespoons juice)
  • 1 cup chopped ripe strawberries

Topping:

  • 4 tablespoons soft butter
  • 1/4 cup all-purpose flour
  • 1/4 cup old-fashioned oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • pinch salt

Other:

  • Baker's Release spray

Drizzle:

  • 1 cup sifted confectioner's sugar
  • 1 teaspoon clear vanilla extract
  • 4 teaspoons milk

Instructions
 

  • Preheat oven to 375F.
  • Spray an 8x8-inch square glass baking pan with Baker's Release spray and set aside.
  • Combine flour, baking powder and salt in a small bowl.
  • Slice the firm banana and place in a small bowl with the lemon juice (to prevent discoloration).
  • In another bowl, mix the granulated sugar, cooled melted butter, egg, vanilla and mashed banana until smooth, then fold in the sliced banana (with the lemon juice as well) and the chopped strawberries.
  • Add the dry flour mixture and stir just until moist and incorporated.
  • Spread the batter in the pan sprayed with Baker's release.
  • Mix the topping ingredients until crumbly and sprinkle over the batter.
  • Bake for 35-40 minutes or until you can insert and remove a toothpick without wet batter clinging to it.
  • Cool in pan15 minutes, then turn out and complete cooling on a wire rack.
  • Stir together the drizzle and spoon lightly over the cooled coffee cake.
  • Cut into slices and serve.
