Hatch Green Chile Corn Muffins are my  recipe of  the day with the blogging group Muffin Monday. We get together monthly on  the last Monday to post the muffins we have been baking up.

It’s the end of the month again! Where does all the time go?

I am  sharing my Hatch  corn muffins,  since it is Hatch season again. If you love these New Mexico peppers, keep your eyes peeled as they will  make their appearance in  some markets that  set up roasters. If you miss out,  some places will have extra in their freezer sections.

However,  you can still use other types of green chiles  in this.  Especially the  canned. Those are  common in  all markets.

If you do  manage to  snag some Hatch peppers at the market, they do freeze well and keep for months. I tend  to divvy those up into smaller usable  portions and pack them that way.  Rather than having  a huge frozen  rock  of  them.

Equipment

  • muffin tin

Ingredients
  

  • 1 cup chopped roasted green Hatch chiles
  • 1 cup buttermilk
  • 1/2 cup cooled melted butter
  • 2 large eggs lightly beaten
  • 1-1/2 cups all-purpose flour
  • 3/4 cup yellow cornmeal
  • 1 tablespoon granulated sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions
 

  • Mix wet and dry ingredients separately, then combine.
  • Divide batter into 15 greased muffin cups.
  • Bake at 350F for 20-25 minutes or until a toothpick tests without wet batter.
  • Cool in pan 5 minutes, then turn out.

  1. My local supermarket doesn’t roast the hatch chili peppers but know some do. I like to roast my own in the oven then freeze them to use all year round. They go perfectly in cornbread muffins!
