DIY Rotisserie Chicken Seasoning is my recipe of the day and is my personal recipe for a seasoning rub to use on chicken. Or even on things like turkey.

The balance of savory flavors with that light touch of sweetness takes an ordinary roasted chicken from plain to over the top.

You can put your chickens on something like a Weber rotisserie or in an electric rotisserie. But it even works gangbusters for a chicken propped on a “beer can chicken” type of metal support. Either on the grill or in the oven.

Rotisserie Seasoned Chicken with Dressing and Cranberry Sauce

For ovens using the support, I set the frame in a short pie plate. This allows heat to circulate nicely around the chicken.  But obviously not great for a turkey.

Ingredients

  • 2 tablespoons salt
  • 2 tablespoons granulated sugar
  • 2 tablespoons smoked paprika
  • 2 teaspoons black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon poultry seasoning
  • 3/4 teaspoon powdered lemon peel
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon ground thyme
  • 1/2 teaspoon ground rosemary
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon turmeric

Instructions

  • Stir together and store in an airtight container.
  • Yield: 1/2 cup
