I am sharing my recipe for a simple yet delicious cucumber salad.

I’ve long been a fan of cucumber salads, especially when the summer cookout season rolls around. They’re very simple to throw together, yet delicious and flavorful.

They’re also a great way to use some of the bounty of a homegrown cucumber crop. You know, once they come in you may feel overrun and be looking for ways to use them. Something to keep in mind as the garden season rolls from growing to harvest.

Ingredients

  • 2 cucumbers peeled and sliced
  • 1 medium onion sliced
  • 2/3 cup apple cider vinegar
  • 1/2 cup sugar
  • 1/3 cup vegetable oil
  • 2 tablespoons prepared mustard
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon celery seed
  • 1 tablespoon chopped Italian parsley

Instructions

  • Combine and chill for one hour before serving
