Honey Yogurt Muffins is my recipe of the day with the blogging group Muffin Monday! We post on the last Monday of the month with our newest and best muffin recipes. Glad you could join us!

I decided to make a more “plain” type of muffin for the New Year. I don’t know. Cold weather coming. Snow is coming. It seems like plain food is perfect to go with other foods of the season.

Plus I got a GIANT container of honey on the cheap from the Flash Foods app. That has left me lots, not only to make muffins, but also share my family’s eggnog recipe which I shared yesterday. Family Style Eggnog. 

Having made a double batch of that, it has left me with enough whites to make my angel food cake recipe. Which I shall be sharing in a couple of weeks. So you can see how the frugality of using all the ingredients leads from one recipe to another. And all very happily, too!

Equipment

  • muffin pan

Ingredients

  • 1-1/4 cups plain thick whole milk Greek yogurt
  • 1 cup honey
  • 2 large eggs
  • 1/4 cup cooled melted butter
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  • Preheat oven to 400F.
  • Spray muffin tins with nonstick spray.
  • Whisk together the yogurt, honey, eggs and melted butter.
  • Separately, sift together the flour, baking powder and salt.
  • Combine wet and dry ingredients gently, until just mixed.
  • Divide batter among 15 muffin tin cavities.
  • Bake for 15 minutes or until they test done with a toothpick.
  • Cool on a wire rack.
