This late in the summer my mind starts turning towards autumn flavors. Very soon, there should be the odd cool day, which will be the perfect start. Often, that consists of having my first pot of sauerkraut and also, I love a good applesauce cake.

It goes back with me quite a long way, that I love making some sort of cake like that, no icing, with either applesauce or chopped apples. We’d  eat it plain out of hand,  or sometimes serve it with ice cream and caramel syrup. You should be able to locate sf caramel topping and sf ice cream if you look, but watch those rising carb counts if you are adding them up.

I knew this would be the choice for me this month with #BundtBakers  and the topic being on apples. Thanks to Wendy Klik and Stacy Rushton for hosting this month. It entails a bit of extra work behind the scenes to host and get these recipes rounded up for you all to enjoy.

I made this one with a cake mix since  I had one on hand on the off chance I would use it for something.  I happened to have the syrup on hand but make sure you can order that before mixing up your cake and finding you are stuck. You could use a cinnamon  type  sugar free syrup but the one I used also has apple flavor which adds to the taste.

Apple Pecan Spice Cake (Reduced Carb)
Ingredients:

  • 16 ounce Pillsbury Moist Supreme Sugar Free Yellow Cake Mix
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon grated nutmeg
  • 1/3 cup seelect tea sugar free apple pie flavored syrup or other sf apple pie flavored syrup
  • 1/3 cup unsweetened  apple sauce
  • 1/3 cup half and  half
  • 1/3 cup melted butter, cooled to room  temp
  • 1/4 cup sugar-free  maple syrup
  • 3 large eggs
  • 1/2 cup chopped toasted pecans
  • sprinkle: 1/2 tsp cinnamon stirred with Swerve granular (xylitol)

Method:

  1. Preheat oven to 325°F.
  2. Spray a 10-cup Bundt pan with pan release spray.
  3. Stir together all the ingredients (except the last bit of cinnamon sugar) until  the batter is smooth and pour into  the prepared pan.
  4. Bake in the preheated oven for 39-43 minutes or until a toothpick, inserted, comes out without wet batter.
  5. Cool in the pan ten minutes, then turn out  to finish cooling  on a wire rack.
  6. Sprinkle with “cinnamon sugar” (cinnamon-xylitol) if desired.
  7. Slice into twelve.

I ran  into a  bit  of a snag when trying  to get a nutritional  analysis for you. I used a sugar-free apple pie syrup in this, and  although there are several  that can be bought, none  of them would come up in the calculator and no place to input. So short  of a full calculation, I am leaving it off the recipe today. If they should ever add it to their list  of stuff, I will  go in and do the label. Fair enough? The cake mix has some flour, so if you do keto, this is not for you. If you  do diabetic friendly, you should be ok.
