Quick easy nosh loaded with fresh garlic flavor
We’d been out and about to the local farmers markets over the weekend.
Some dealers at Findlay Market in Cincinnati were supposed to have some on hand, but I didn’t see any. But we did have a good time at Findlay, and bought lots of stuff!
Fortunately, we stopped by Pipkin’s Fruit and Vegetable Market in Blue Ash on the way home and they had just gotten some in about an hour before.
Garlic Scape Crostini
I imagine there are many great ways to prepare scapes, including making hummus or spread to serve on toast, but when we got home we were starving, and these really take only a few minutes to whip up.
The scapes themselves are really garlicky and fresh tasting, perfect with a smear of cheese and a sprinkling of pine nuts.
INGREDIENTS:
- 4 crusty bread slices (1/2-inch slices Italian or French bread)
- 4 fresh garlic scapes
- 1 tablespoon butter
- 2 to 3 tablespoons garlic-herb cream cheese, chevre, or boursin
- 2 tablespoons pine nuts (toasted)
Method:
Step 1
Toast bread slices in a toaster oven or under the broiler.
Step 2
Chop scapes and saute in butter for a few minutes until crisp-tender (about as tender as you like your asparagus).
Step 3
Spread toast with boursin or cream cheese, then top with scapes, and sprinkle with pine nuts.
