Irish Soda Bread Muffins

  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon cream of tartar
  • 1-1/2 teaspoons caraway seeds
  • 1/3 cup granulated sugar
  • 1/2 cup dried currants
  • 1 cup thick yogurt
  • 1/3 cup melted cooled butter
  • 1 large egg

  • 1 tablespoon each of old-fashioned oats and dried currants



  • Preheat oven to 375°F (190°C).
  • Mix together the first eight (dry) ingredients, then combine with the yogurt, cooled melted butter, and egg to make a batter.
  • Divide into 12 paper lined muffin cups.
  • Bake in the preheated oven for 20-22 minutes or until a toothpick, inserted, is removed without wet batter clinging to it.
  • Turn muffins out of pan and cool on a wire rack.
