DIY Hot Dog Onion Sauce

Ingredients
  

  • 1 pound onions peeled and chopped
  • 2 tablespoons olive oil
  • 1 cup water
  • 1/2 cup ketchup
  • 1/4 cup sauerkraut brine juice
  • 4 teaspoons granulated sugar
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon dried parsley flakes
  • 1 teaspoon mustard seed
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dill weed
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cinnamon

Instructions
 

  • Saute the onions until soft, then add the remaining ingredients and simmer over low heat until thick.
  • Serve on hot dogs, as per the style, with mustard and some sauerkraut.
  • Yield one pint (store unused portions in a jar in the fridge, up to one week).
